amo moltissimo i gamberi e cercando una ricetta insolita da fare ho trovato questa facile, diversa  e cromaticamente bella!…sopratutto buona e leggera!
 
 
Gamberi alla salsa di lamponi

Gamberetti con salsa di lamponi frullati, cetriolini e cipolline in guarnizione

L’idea cioè di accostare questi due sapori: il gamberetto e il lampone e di ricavarne un delizioso antipasto veloce. Un piatto a base di gamberetti che ritengo possa rappresentare un notevole elemento coreografico all’interno di una cena di pesce come si evince anche dalla foto nella quale il cromatismo della portata raggiunge un eccellente equilibrio armonico: il verde dei cetriolini, l’arancione salmonato dei gamberetti e il rosso purpureo della salsa e delle fragoline.

INGREDIENTI: (per 4 persone) 16 grossi gamberi, 1 limone, 250 g di lamponi, 1 cucchiaio scarso di zucchero, 1/2 cucchiaio di aceto, 4 cucchiai di olio extravergine di oliva, 1 cetriolo e 1 cipollina fresca e fragoline di bosco per guarnire

PREPARAZIONE: Come prima operazione pensiamo alla salsa. Frullate i lamponi con il succo di un limone e lo zucchero. Cuocete la purea in un piccolo tegame, rimestando e, appena inizia a imbrunire, accingete l’aceto, fate evaporare e togliete dal fuoco. Ancora calda, passate la salsa al setaccio per eliminare i piccoli semi dei lamponi quindi tenete da parte. Lavate bene i gamberi sotto l’acqua corrente, versateli in una pentola con acqua bollente salata. Dal momento in cui l’acqua riprende il bollore, calcolate 3 minuti di cottura. Scolate i gamberi e sgusciateli, eliminando il filo nero intestinale e sistemateli su dei piatti individuali, disposti a raggio. Mondate e lavate il cetriolo e la cipollina fresca e tagliateli a rondelle sottili. Accompagnate con fettine di cetriolo , cipollinae fragoline, condite con un filo di olio e la salsa di lamponi.

Come vino da abbinare a questo piatto nucciconsiglia un vino bianco marchigiano DOC: il Bianchello del Metauro, vino sapido e dagli aromi floreali e freschi che sapranno fondersi molto bene con la delicatezza dei gamberi al lampone.
